A peaberry lot from the slopes of the Southern Highlands. Peaberries are the rounder beans that form when a cherry grows a single seed instead of the usual two — sorted out during milling and prized for their concentrated, distinctive flavor. Fully washed and dried on raised beds, and grown by smallholder farmers, then processed at central mills that receive, sort, and process cherries from many small farms together — lifting quality, earning better prices on the international market, and putting more income back in farmers’ hands without the burden of maintaining their own equipment.
