We don’t pull your coffee off a warehouse shelf. It’s roasted in small batches to order and packed the same day. So what lands on your doorstep is coffee at its peak, full of the flavor — a bag that’s been sitting around simply can’t match.
Our roaster is FDA-registered and FSMA-compliant — a standard most roasting facilities never meet. Profiles are dialed in on sample roasters, then matched on small drum roasters so the cup is consistent bag after bag. We’d rather earn your loyalty with what’s in the cup than with a sales pitch.

How fresh is your coffee?
About as fresh as it gets — every bag is roasted to order in small batches, never off a shelf. Whole bean is roasted the same day it ships. Ground is roasted the day before, giving it a day to rest and release its natural gases so it brews smooth and balanced rather than sharp. Either way, your coffee arrives full of flavor and character, the way it’s meant to taste.
What does “specialty-grade” actually mean?
It means every coffee we sell has been carefully sourced, properly roasted, cupped for taste, and inspected for quality before it earns our name. It’s the top tier of coffee — and it’s the only kind we sell.
How is the coffee roasted?
Each coffee’s profile is dialed in first on small sample roasters to find the ideal roast level for that specific lot. Once it’s right, that profile moves to small drum roasters so the cup stays consistent from one bag to the next. Small-batch and craft-roasted — never mass-produced.
Is the roaster held to food-safety standards?
Yes. Our roasting partner is FDA-registered and FSMA-compliant — a bar most roasting facilities never clear. It’s part of how we stand behind the quality and safety of every bag.
How is the decaf made?
Our decaf, Still, uses the Swiss Water® Process — a 100% chemical-free method that uses only water to remove the caffeine while protecting the coffee’s flavor. You get a smooth, full cup without the caffeine.
When will my order ship?
Because coffee is roasted to order, orders typically ship in 3–5 business days — a little longer around holidays and peak times. We’d rather it take a day to be roasted fresh than send you something that’s been sitting around.
Shipping & Returns
We ship to the United States only. Coffee and tea are roasted to order, so orders typically process in 3–5 business days before shipment. Flat $4.50 shipping on one-time orders; free shipping on every subscription order. Carriers are primarily USPS, with UPS on some shipments.
Because coffee and tea are perishable, we don’t accept returns. If your order arrives damaged, doesn’t arrive, or contains the wrong item, email info@castorandpollux.com within 72 hours of delivery and we’ll refund it to your original payment method.
